Why try for centuries to conquer people that the deem inferior? Couldnt they just find some planet somewhere and live there own way? No ones really bothering them? but that is kind of a lame question. with that logic you could ask why anyone who was not purely defending themselves would ever try to take over the country/world/universe. The Kwitsatz Haderach was not something the Bene Gesserit could control (not in Maud'dib or Leto II) they did not even see it coming.
