I think that, when you write Lord of Water, it's like saying Water's Lord.

The boss of me = My boss.

The cord of the computer = The computer's cord.

Perhaps it is a way of putting variation into your language by replacing genitive.

I thought perhaps epithet, but I don't think that's what you're asking. Dominion, Domain, Sphere, or some weird technical phrase like cratic genitive (yes, I made that up).
