How does one change the different skirmish/multiplayer themes for the various houses? I've read the music.txt but still don't understand how to change those themes. I'm getting quite bored at listening to just two different tracks when there are many more available for all houses. I'm grateful for any help, thanks in advance.

First of all, it is pretty dumb to have music playing while you are playing online, unless you have good ears. And you could change the tracks in the GameOptions in mid-game, in the Music section.
