I'm pretty good at the basics but have a quick question about the AI in the game. Do they follow the same supply and demand structure that human players do? I feel like all they do is run passenger trains between cities and always score huge revenues from them. If I run passengers between cities like they did, my cities would be empty after 2 trips.

Yes, the AI railroads can produce cargo out of thin air and make a profit.  I enjoy controling more then 50% of an AI's stock.  You can take control.  

buy a locomotive and program the AI to run its trains on you home track and pay you to do so, etc.

The computer's trains do use the advanced freight in at least one way: If you supply a factory so it produces its output, and if the computer RR has a train waiting at a station covering the factory, the computer's train can change its cars and pick up "your" output before you do.
